I'm pretty confident the meme is pretending you like MLP. Because that would be silly. That's originally what I thought was going on when /co/ stopped being cool and started being a MLP board. It kept going though until I thought it was sincere, now I'm pretty sure, with the exception of a few that got caught up in the trend, it's a tongue-in-cheek fad.
Not really, most people who tend to discuss and watch the show are either fans or hipsters trying to be "ironic".
I personally, enjoy the show because it's clever and pretty funny at times. It has a good musician doing the soundtrack and is pretty damn well animated for a show made on flash and for a show that's suppose to be a modern Saturday morning cartoon from a big corporation, it's pretty much the opposite from what I'd expect. Mostly because of Lauren Faust. And more or less because me and my niece watch it, it's good bonding. So yeah, I don't know what you mean by "tongue-in-cheek fad", people who do watch the show usually watch it unironically. And as far as I am concerned, this is a good thing since shows like these, especially with toy licenses marketed at girls tend to be well... dopey, stupid, formulaic... so on and so forth.
Now I am not saying that you're wrong, there are a lot of people like that but mostly the show does have ACTUAL fans with people who actually watch it. Bronies however, I can do without.

I am legitimately a fan. It is one of the few modern pieces of media that actually appeals to me cause it has so many ties to the cartoons I grew up with in terms of feel and humour. And the fact of how good the quality is, and how it often mocks itself. It also uses a lot of sly references to pop culture, mainly the newest episode referenced Trainspotting and The Exorcist in one single scene. The quality of the music and song are also amazing, mainly Winter Wrap-Up which just sounds great in general, and We Are The Cutie Mark Crusaders which reminds me so much of those cheesy but awesome rock songs from the 80's.

I'm going to ask this on the MLP subreddit as well, but if I only watched one episode to try to see the appeal of the show, which episode would you recommend?
I can respect that as a reason for enjoying the show, but if you really feel that it is a rarity among modern media in terms of its roots and inspiration taken from other things, I suspect you're not really looking. There are tons of shows, movies, games, etc. that all connect to cartoons of yesteryear.
Hmm, I don't know, I love so many. But the season 2 opening two-parter "Return of Harmony" was my favourite this season. There's also Episode 25 of Season 1 "Party of One". But I'd recommend the first one I mentioned.
Now I can't guarantee you'll enjoy it, I can say I will understand if you don't like it, it's not for everyone.
Oh and personally I don't agree with Roza but in terms of animated shows, this and regular show are the only two modern ones to hold my interest.
Season 2 Episode 3- Lesson Zero is pretty good too.
