I don't really know exactly. I just missed the feeling of the old lighting, no new structures (villages, ravines, etc.), Old GUI, etc. I see it as this: if you play Minecraft to go on adventures and fight, play 1.8. But if you play Minecraft to build and create stuff, stick with 1.7.3. It's annoying trying to build a cool underground building or something and then running into an abandoned mine shaft.
Also, I'm a big fan of making mob farms, and when 1.8 came out the mob spawning code was completely rewritten. Now it's very difficult to make an efficient hostile (creepers, zombies, etc.) mob farm and it's literally impossible to make a passive mob farm (pigs, sheep, etc.).
Well, before I updated with the 1.8 jar, I had a backup of my 1.7.3 jar. All I did was replace the 1.8 jar with the 1.7 one and at the login, put in some wrong password and play offline.
If you don't have a backup, then I don't know what to tell you. Try looking around the official minecraft forums I guess. :/

I've been playing on a 1.7.3 server using that. Just run it then go to options then download the version you want, then select it from the drop down menu!

I'm starting to understand how you feel, mining isn'tt as simple anymore, everywhere I go there's a cave or shaft. Also I don't remember this in 1.7 but it seems right click and hold with a sword puts up a defense, I'm not yet sure how efficient or useful it is but just a notice.
They wont let me buy minecraft for some reason, I go to their website and I entered my credit card info and shit, it won't let me buy it.

I can't stand creative mode. Sucks the fun out of building.
Oh and 1.8 feels rushed. Because of the insufferable community for this game.
