    Default Photoshop - Expand Selection?

I have a quick question. When I have a selection in photoshop, and I want to expand it (select>modify>expand), is there a way to make it a smooth expansion? If I expand it too much, it eventually gets really really choppy. Any help is appreciated. Thanks.

I am making a Cooking Mama logo, if you are not understanding. The top is my attempt at the logo (without effects), and the bottom is the actual logo. Notice how mine is pretty choppy...

If after you expand your selection, while you still have the area selected, you go to Select>Modify>Smooth, you can smooth some of those rougher edges. If you over smooth the area, however, if becomes like an oval.

Just select the red text and edit/stroke it white. Then select the whole thing (Both red text and white outline) and do the same thing with orange.

It still comes out choppy beardedwalrus. But it is not as bad as simply expanding. I just stroked it and traced it smoothly with the pen tool. It looks nice . Thank you fellas.
