Ok, so I was trying to go for something different here and things havent quite panned out how I wanted them to exactly... and so I was just wondering what you guys actually thought so far... hmm.

yeah, if it has a simple plain background and the magic wand tool will cut it without being too rough, then you can use those steps and it works well. problem is you may still get a few choppy bits...
If you magic wand it, delete the area.
select the layer, right click and blending options. Go to stroke, add an inside 1 pixel stroke and make the opacity 0%. Now you will have a cleaner render....
I would personally use the replace colour option...
image->adjustments->replace colour.
Then pick the red and adjust the settings in the box that opens.
Other ways are possible, such as...
for the second one, you could just use the pen tool to cut out the characters.
eg: you have your stock and you cut a circle out of it to make a new layer.
back on your stock, you render/cut out...
