open the Pathfinder toolset (Window > Pathfinder)

make a shape for the outside, make a shape for the hole, make sure the hole shape is on top.
select both.

now simply go to the Pathfinder...

a lot of Publishers are now putting the manuals for download on their websites, to save on printing/paper etc. so perhaps try there for newer games.

you could move him over with a bit of fiddling. cut him out from the background, shunt over, then clone background to suit, doesn't look like too big a job as the background is mostly faded at the...

you should also try Identifont: http://www.identifont.com/

try the "Limited set of letters" link, type in what you have, then answer questions about it to get a set of matches, not always accurate...
