I would highly suggest the ginger, but if you can't then try it out anyways and see how it goes. Back home we make our own Mirin, but store bought would work just as well. Tell me how it is if you decide to make it!

Here are the ratios for the sauce; if you want a spicy version, soak dried red chili peppers (you can find at supermarkets) in them for a day then take them out:

1/2 cup good soy sauce
1/3 cup Mirin
1/2 cup raw sugar
1 tablespoon fresh ginger
1 tablespoon celery
1 tablespoon negi (type of onion, can be found at supermarket)
1 tablespoon nira (chive)

Combine together, boil for 10 minutes then bring to a simmer; add vegetable and simmer for 15 minutes. After, strain out the vegetables and you're done!
