I just saw a similar thread at Gametrailers so I thought it would be pretty cool to see what your opinions are for the most epic boss battles in gaming. Not cutscenes, the actual gameplay. Mine would be:

Bowser - Part 3 (Super Mario Galaxy)
Meta Ridley (Metroid Prime 3)
All the Disney bosses (Kingdom Hearts II)
Sephiroth (Kingdom Hearts II)
Xemnas (Kingdom Hearts II)
The Hydra (God of War)
Metal Kor (Jak II)
Verdugo (Resident Evil 4)
Sin - Scorpion form (Final Fantasy X)
Berial (Devil May Cry 4)
Captain Qwark (Ratchet & Clank 1)
Thug Leader (Ratchet & Clank 2)
N. Gin (Crash Bandicoot 3)
Clockwerk (Sly Raccoon)

I predict many MGS and Shadow of the Collosus bosses...

Meta Ridley (Metroid Prime 3)

Is that the one where you're falling? Cuz that's my pick. Plus...

-Ansem (kingdom Hearts)
-Ganon (Ocarina of Time)
-the Ice Titan (Kingdom Hearts)
-Final Boss in Zack and Wiki

More to come...

Any battle with the 16 colossi in Shadow of the Colossus is the most epic I've ever felt in any videogame.

Especially when you take on the first flying colossus. No experience is quite like it.

EDIT: Greg, I'm actually surprise you don't have any God of War II battles on your list.

Tabuu [SSBB]
The final boss in Super Mario Bros. :p
The REAL final boss in Sonic the Hedgehog 2 [Doomsday Zone]
That weird diamond thing in Kirby 64 [2nd World, or Rock Star]
King Dodongo (Errr... however the crap you spell it) [Zelda : Ocarina of Time]

I know I'm thinking old skool (except for Brawl), but since I was younger, they were really epic to me then...

Shadow the Hedgehog

These weren't that epic, but pretty much all of the Twilight Princess bosses so far have been epic to me (SPOILERS: I'm searching for the Twilight Mirror btw. If anybody wants to tell me where it is....)

Im gonna go a bit old skool here and say the last Dr. Robotnik fight on Sonic 1. I mean, the Final Zone was just epic (back in 1991 anyway) and the music was just OMG! Still sends shivers down my spine just thinking about it. Seeing Robotnik's smug little grin whenever I hit him just made me even more angry!! And of course, back in the day, we never had hard-drives or memory sticks and there was no way to save the data. So unlike today's games, if you die at the final boss, you had to start the WHOLE game all over again! All this added up to some pretty epic 2D memories.

As LadyKiller said, any battle in Shadow of the Colossus is epic, and those are my favorite boss battles.
Officially, one of the most epic boss battles of all time is the Psycho Mantis battle (Metal Gear Solid). In the battle, Psycho Mantis can "predict" Snake's attacks and subsequently dodge all of them until the player unplugged the controller from its current port and plugged it into another port. I've never played that boss battle before, but from what I've heard I want to play it to see how hard it truly is.

The Brumak fight from the PC version of Gears of War.

Two words to describe it? FUCKING EPIC.

The Psycho Mantis boss fight was very fun, but not really what I would consider "epic." I've fought him on both versions (PSX and GCN) and it's pretty much the same except you have to switch controller ports a few more times for the Twin Snakes.

He starts off by reading your mind or something (he's actually reading your game save files) He's all like: "You like to play rpg's..." And I'm like "WTF! How did you know that!" lol. Gets really creepy once you fight him though, the tv would seemed like it loss audio/video a couple of times even...lol.

The 16th Colossi - Shadow of the Colossus

The many Metal Gear Rays - Metal Gear Solid 2

I didn't think the original Sephiroth battle (both forms) in FFVII was very epic...but then again, I did have Knights of the Round at that point. (You cast it once and the fight's over)

Same thing with the Metal Gear Rays...that only ended up annoying me. The only fights I liked in mgs2 were with Olga and Fatman. The most epic fight in the game would be fighting against all those ninja like soldiers with Snake...now that was EPIC!

Come to think of it, squaring off against Yiazmat (51 million hp- took me about 3.5 hours) in FFXII was pretty damn epic too.

I can understand not having spoiler warnings for games that were released ages ago, for example a year. I'm sure those who would be bothered enough would have played them already but please use spoiler warnings for recent games.

That wasn't a spolier
You get informed of Outer Haven when you start the game in the first brefing by Campbell.
